It is a popular dish served during special occasions and festivals like Pongal, Navratri, and Diwali.<\/p>\n\n\n\n<p style=\"font-size:15px\">To make Kalkandu Rice, raw rice is cooked in milk and flavoured with cardamom and a pinch of salt. Once the rice is cooked, kalkandu or rock sugar candy is added to the mixture and stirred until it dissolves completely. Here&#8217;s a simple recipe to make Kalkandu Rice:<\/p>\n\n\n\n<div class=\"wp-block-uagb-advanced-heading uagb-block-2eb793ac\"><h5 class=\"uagb-heading-text\"><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-vivid-cyan-blue-color\"><br>What are the Ingredients?<\/mark><\/h5><\/div>\n\n\n\n<p style=\"font-size:16px\">1 cup raw rice<\/p>\n\n\n\n<p style=\"font-size:16px\">3 cups milk<\/p>\n\n\n\n<p style=\"font-size:16px\">1 cup kalkandu (rock sugar candy)<\/p>\n\n\n\n<p style=\"font-size:16px\">2 tbsp ghee (clarified butter)<\/p>\n\n\n\n<p style=\"font-size:16px\">2-3 cardamom pods<\/p>\n\n\n\n<p style=\"font-size:16px\">A pinch of salt<\/p>\n\n\n\n<div class=\"wp-block-uagb-advanced-heading uagb-block-03445028\"><h5 class=\"uagb-heading-text\"><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-vivid-cyan-blue-color\"><br>How to cook Kalkandu Rice?<\/mark><\/h5><\/div>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Rinse the rice in cold water and soak it in water for 30 minutes. Drain the water and keep the rice aside.<\/li>\n\n\n\n<li>Heat ghee in a heavy-bottomed pan and add the drained rice. Roast the rice on low flame for 3-4 minutes until it turns slightly golden.<\/li>\n\n\n\n<li>Add milk to the rice and let it come to a boil.
