What is Lemon Rice?

Lemon rice is a popular dish in South Indian cuisine that is made by mixing cooked rice with lemon juice, spices, and sometimes nuts or vegetables. The dish is known for its bright yellow colour and tangy, citrusy flavour.

The dish is usually made with basmati rice or a short-grain variety of rice that is cooked until fluffy and separated. The cooked rice is then mixed with a flavorful tempering made of mustard seeds, cumin seeds, urad dal (split and skinned black gram), chana dal (split and skinned Bengal gram), and sometimes peanuts. The tempering is then mixed with the cooked rice along with turmeric, salt, and lemon juice. What are the Ingredients?

1 cup of raw rice

2 tablespoons of oil

1/2 teaspoon of mustard seeds

1/2 teaspoon of cumin seeds

1/2 teaspoon of urad dal (split and skinned black gram)

1/2 teaspoon of chana dal (split and skinned Bengal gram)

1/4 cup of roasted peanuts

2 tablespoons of lemon juice

1/4 teaspoon of turmeric powder

Salt, to taste

Curry leaves, for garnishing


How to cook Lemon Rice?
  1. Wash the rice thoroughly and cook it in a rice cooker or on the stove with 2 cups of water until fully cooked.
  2. In a pan, heat the oil on medium heat.
  3. Add the mustard seeds, cumin seeds, urad dal, and chana dal to the pan and stir until the seeds start to crackle and the dal turns golden brown.
  4. Add the roasted peanuts to the pan and stir for a few seconds.
  5. Add the cooked rice to the pan and mix well.
  6. Add the turmeric powder and salt to the rice and mix well.
  7. Turn off the heat and add the lemon juice to the rice, mixing it in thoroughly.
  8. Garnish with curry leaves and serve hot or cold.

Your lemon rice is now ready to be served. It can be enjoyed on its own or with other side dishes such as pickles, or chutneys.
