How to prepare Chicken Biryani?

What are the Ingredients?

1 lb chicken, cut into pieces

2 cups basmati rice

3 cups water

1 onion, chopped

3 cloves garlic, minced

1 inch ginger, grated

2 green chilies, chopped

1/2 cup plain yogurt

1 tsp cumin seeds

1 tsp coriander powder

1 tsp garam masala

1 tsp turmeric powder

1 tsp red chili powder

2 bay leaves

4 cardamom pods

4 cloves

1 cinnamon stick

1/4 cup cilantro leaves, chopped

1/4 cup mint leaves, chopped

2 tbsp ghee or vegetable oil

Salt to taste


How to cook chicken Biryani?
  1. Rinse the rice under running water until the water runs clear. Soak the rice in water for at least 30 minutes.
  2. Heat ghee or oil in a large pot over medium heat. Add the cumin seeds, bay leaves, cardamom pods, cloves, and cinnamon stick. Sauté until fragrant, about 1 minute.
  3. Add the chopped onions and sauté until they turn translucent.
  4. Add the minced garlic, grated ginger, and chopped green chilies. Sauté for another minute.
  5. Add the chicken pieces and cook until browned on all sides, about 5-7 minutes.
  6. Add the coriander powder, garam masala, turmeric powder, red chili powder, and salt. Stir well to combine.
  7. Add the yogurt and mix well. Cook for another 5-7 minutes, stirring occasionally.
  8. Drain the soaked rice and add it to the pot. Stir gently to combine.
  9. Add the water and bring the mixture to a boil.
  10. Reduce the heat to low and cover the pot with a tight-fitting lid. Cook for 15-20 minutes or until the rice is fully cooked.
  11. Remove the pot from heat and let it sit, covered, for another 5-10 minutes.
  12. Garnish with chopped cilantro and mint leaves before serving.
